I think I'm wasting too much money overbuilding mid game. I need to take notes. Also, does everyone stack in the middle block?

Middle is good, that's what I used. Taking notes on when to upgrade and wisely spending/investing money seemed to work for me. Otherwise you're always over or underbuilding and getting into some trouble.
You need a lot of cash (2k'ish) by the time you hit the bonus levels to even think about getting past them.

leaked one guy in that level - otherwise would have won
i built everything around the start and combo rockets in the middle.
built fire + water at the start
used fire build, than wood to get interest rates, than upgrade to combo and stack about 7 combo rockets in the middle.....
sigh, but I can't get past that level......
i tried to google a better strategy and found this blog with this game:

Well, I finished it, a little over 8,000 points after clearing the final bonus level. No idea how people are getting scores like 30,000.
After playing around, some of my strategies:
*At first, only build cannons. And be very stingy in building them, only add a new tower when its obvious that the creatures will get past your existing ones.
* With the limited range they have, placement of the cannons isn't quite so important, just place them anywhere there's a 'loop' so that you will have maximum opportunity to shoot at the creatures.
* Upgrading cannons is a decent strategy...you will do the same amount of damage for the amount of gold spent if you just build a bunch of level 1 towers, or if you build fewer towers and upgrade them to level 2 or 3 (ie. 9 gold builds a level 1 tower that does 9 damage; 24 gold builds a level 2 tower that does 24 damage; 50 gold builds a level 3 tower that does 50 damage). But since the higher level towers get some extra 'splash' damage, upgrading is likely the more efficient strategy.
* Use the first wood to upgrade the fire element; at that point, sell all your cannons, and only build fire towers. Again, be very stingy (for example, you only need two towers for level eight, so don't build more). Remember, the more money you have at the end of your turn, the more you will get from the interest. And it does add up.
* Do NOT upgrade fire towers! The ratio of gold to damage isn't worth it. For 750 gold, you can build 15 level 1 towers, or six level 2 towers; the total damage from your 15 level 1 towers will be 1125, while the total damage from your six level 2 towers will be 1050. Similarly, upgrading to level 3 and level 4 results in increased costs with decreased total damage. You DO get increased 'splash' damage, but from what I've seen when playing, it doesn't compensate for the decreased overall damage.
* Just keep building fire towers as you need them, but again, be stingy...only build them as you need them, and position them strategically to cover as much area as possible (when you go to place a tower, a circle around the tower will show you what the range is).
* With the second wood, increase your interest rate to 15%
* With the third and fourth woods, water and earth elements
* I played around with the water towers a little, to see how effective they were in slowing down the creatures (and giving me more time to shoot at them), but found that in the higher levels especially, the result is minimal at best
* When you reach the bonus levels, your fire towers won't cut it any more (or at least they don't cut it for me...if someone's won using just fire towers, please tell us your strategy!). Now you need to use the combo towers. Sell all your fire towers, build only combo. As before, build only as needed, keep as much gold in your account as possible to keep getting that interest.
* Upgrading your combo towers is definitely a good deal, the best deal of any of the towers in the whole game! You get double damage (shooting twice as fast) for less than double cost.
* After that...its survival of the fittest. Best thing to do is keep track of the minimum number of towers required to clear each bonus level, and only build that many at the beginning of each round.
* Most definitely place ALL your combo towers in the central square...they have massive range that covers most of the board, so putting them in the middle ensures they can do maximum damage for the maximum length of time.
Well, this is the strategy that's worked for me...I'm sure others have found different ways (and, obviously, it can't be the BEST strategy, since its not netting me anywhere near as much total score as some other players!). So, anyone with alternate suggestions, feel free to chime in!

Not true. I beat it with a score of +11000 with just fire towers. Granted I probably had over 200 fire towers for the last bonus level. I usually go with fire and three interest rate increases, and not necessarily in that order. I don't upgrade any of them and just add them as I need them especially before fast rounds.

Victory with 12,582 points.
A few arrow towers and cannons until ~level 9 (whenever you get first wood). Then fire towers from there at an add rate of 1 per level, overlapping each other starting from the corner of the bottom right straight. I ended up never building in the middle.
