Anyone know if you can tell how many players are online playing on their network?

Nah, just getting bored since I'm sitting here working from home over the weekend when I don't normally work weekends.
I saw your question, didn't know myself, so I fired up PR and did a quick search. Anyways, glad to assist.

Popularity - Total players, game selection, tournaments, etc
Became very popular, especially after the marketing push in the spring of 2005. Has many players, not sure of the exact number but the traffic is very high, especially at lower limits (below 100NL). There are always at least 10 tables that are almost full and SnGs fill up almost just as fast as on party. The game selection is very diverse as well. The limits range from .25-.25 to 100-100NL and 500/1k limit(the biggest limit game on the net). There are many tournaments running all the time. i think that this site is great for a low-med stakes MTT player because they always have one $5 and one$10 MTT open for registration at all times. Their prize pools for the bigger tourneys - 20k, 40k, 50k guarantted and the big deal are already beating the guaranteed amounts. They also host the Grand Tourney with a $1000 buy in which is quiet huge. Another great thinh is that they have the poker league where you can make your own poker team, manage funds etc, and player against other teams. In addition to that, they have private table tournaments where you can create your own tourney and set the start time, prize distribution, blind levels, amount of players, chips stack - basically everything. These are one of a kind on the net as well. Ok to top it all of I think they have a great system of satelites and qualifiers. For example, you can qualify for the $50 and $100 MTTs BUT you can also use your ticket to play in any $50 or $100 SnG.
Competition - Toughness of ring games and tournament games
not very hard especially at lower limits. easier than UB and poker stars, harder than pacific and probably the same as Party.
Software - Quality of interface, multi-tabling, audio cues
great software. one of the best on the net. nice notes, shows percentage chance of you winning after you are all in (great for self esteem when it actually says that you are 98% favourite and you end up loosing), fast and has really nice stats for your ring and MTT game which are integrated into the server and track your game while you play - i.e mini pokertracker.
Security - Operator integrity, certification, gut feel
so far so good
Promotions - Sign up bonuses, bad beat promos, deposit bonuses
the usual...nothing amazing
Support - Quality and speed of technical or game support
very nice..they respond within 24 hrs. and are good. of course this is not pokerstars but they seem like they know what they are doing
Ethics - Trustworthiness of site, true customer oriented site
sure
Overall - 1 to 10 overall ranking of the site

Hated it

Extremely immature players. Take a look at their chat room (which can't be missed unfortunately) and you will see what I mean. Their graphics may be the worst in the business. I finally got so sick of looking at that fat bald guy with the stogie in his mouth I quit playing there.

Is there anyway to get hand histories from tournaments played at Pokerroom?

Yes, you have to request them individually, or you have to know MYSQL and write a bunch of queries to gather all of the data and then concatenate all the data together.

Been playing there quite a bit lately. I don't think you can beat their software for ring games. I do have the Avatars turned off. Tournaments are pretty good, but their HH technique is the worst of any site I play on. I sent them an email complaining about it, anyone else that feels the same way should do the same, let them know they really need to work on that. They responded saying thanks for the input and they would take it under advisement, but I am sure it was just a marketing hand job. That is the only complaint I have with them. I don't understand why they have tools for ring game HHs , but not tourneys.
