Deep Fried Turkey

Been doing it for about 7 years now - I'll never go back to oven roasted. Anybody else fry their bird?

sounds kind of good. been here for 7 years and never had turkey for thanksgiving.

What do you do about the stuffing? I suppose that means you either serve it on the side, or not at all.
I guess I'd have to try it deep fried, but I'm content with the flavor from oven roasting. Did you buy a fryer, or do you simply take it over to a place that has one (like KFC)? It seems like it would save time, but be a helluva lot more messy.

Deep frying the turkey has been popular in the American South for quite some time. As I said earlier, I've been doing it for 7 years. The whole turkey, unstuffed, is lowered into about 4 gallons of 375 degree (F) oil. This must be done outside since it is patently unsafe.
At that temperature, the cooking process is just about 3 minutes per pound of turkey. I typically do a 16 pound bird in 48 minutes versus the typical "1 hour per 4 lbs of turkey rule" that my Mom taught me. The same 16 pound turkey takes 4 hours in the oven.
For me, the beauty is that the meat stays wonderfully moist and the outside skin browns to a dark, crisp, tasty treat. In case you worry about the bird being oily, it's not. At the end of the cooking process I can recover all but 2-3 ounces of the original oil - and that's from spillage when you initially lower the bird into the hot oil.
If you've never had turkey prepared this way, find a way to try it.

I just asked my wife about this. She says that she's tried it before but that it wasn't really worth the trouble. I don't think I've ever tried it.
